Jacopo Giorgi obtained his Master’s degree in Industrial Biotechnology from the University of Padua, with a thesis in molecular biology conducted at Fidia Farmaceutici S.p.A. (R&D – Discovery), focused on the development of an in vitro Dry Eye Disease model for screening ophthalmic formulations. He then completed a research fellowship at the Department of Chemical Sciences (DiSC), University of Padua, working on the development and characterization of a novel food additive rich in Saccharomyces cerevisiae derived polyphosphates using high-resolution mass spectrometry. 
He is now working as a PhD student in the structural characterization of the human tumor suppressor p53, in its apo and DNA-bound states, using hydrogen–deuterium exchange mass spectrometry.
